This is what I'm making today thought it sounded yummy.

250g block Philadelpha Cream cheese cubed
200g Chips Ahoy choc chip biscuits crushed (any brand choc chip)
200g fresh or frozen raspberries (any fruit really Im using aprociots)
60g butter melted
1/2 C Castor Sugar
1/2 C Cream
1 Egg
Finely grated rind of 1/2 a lemon

Combine biscuit crumbs and butter then press into a 20x20cm removeable base tin. Chill in fridge.

Beat the philly and sugar with electric beater until smooth. Add cream, egg and lemon rind and beat again till smooth. Pour onto prepared base and top with raspberries.

Bake at 160 C for 45mins or until set in middle. Allow to cool then remove from pan and cut into squares to serve.
